This month’s pizza special has arrived at Pizza Pilgrims, set to land on your plates from 31 March to 27 April. Joining forces with their friends at Stuzzi, the well-known names in the Leeds dining scene, get set for an exploration of Napoli’s favourite pasta sauce, Genovese.

Although the name might suggest a connection to Genoa, this delicious sauce actually comes from Napoli and is the beloved but lesser-known cousin of the classic Neapolitan Ragu. With a desire to spotlight this delicious creation, Pizza Pilgrims and Stuzzi ventured to Napoli earlier this year to track down the best Genovese sauce and bring it back for a tasty pizza collab. Their search led them to Alfonso, a local legend whose restaurant has been serving Genovese since the 1960s – he welcomed them into his kitchen and shared his secret: it’s all about the onions, slow-cooked to perfection to bring out their natural sweetness.

Back in Leeds, the teams at Stuzzi and Pizza Pilgrims rolled up their sleeves and got to work to create a pizza using Alfonso’s sauce recipe, smoky provola mozzarella, and Pecorino Romana DOP to create a Genovese pizza fit for Alfonso, the Genovese King!
